Spinach and sukuma wiki (collard greens) are both very common and healthy vegetables in many Kenyan meals. They are packed with vitamins and minerals that your body needs. First, both vegetables are rich in similar nutrients like iron, calcium, and vitamin K. That sounds good, but when you take too much of the same nutrients at once, your body may not absorb them efficiently. Sometimes, the nutrients compete during digestion, so you don’t get the full benefit.
